Profile Roberto Costa
Born in 1973, he has been working in the restaurant sector since he was 17 years old. He worked as a waiter in his family’s trattoria in Cornigliano until 1993, when, with his brother, he bought the “Capricci” restaurant in Piazza del Cavalletto, which in 1994 became the “Pagura Bernharda”, a cult venue in those years. In 1997 he gave it up and decided to run the “Centro Surf” on Lungomare Lombardo (Corso Italia) together with two partners.
This proved to be another year-long public success, but Costa, always the experimenter, did not stop there.
Over the next three years he devoted himself exclusively to perfecting his skills, taking training courses in traditional cuisine to learn about the various cuts and uses of meat.
In 2000, with two other partners, he inaugurated “La Cave du Roi”, a very popular pizza and grill restaurant where he stayed until 2001. Then he decided to set up on his own with “BBQ” on Corso Italia, a restaurant-pizzeria-after supper venue with musical entertainment (which, according to many, is the most successful establishment in Genoa in the last 15 years). It was there that he met Alessandro Garrone and a couple of years later, together with Garrone and Marco Pedrelli, the “Maxelâ” adventure began.
Today he is ARG’s operations director, training the staff and setting up the work system in every single establishment, and always striving for the utmost in efficiency, service and quality.
